Why You’ll Love This Green Bean Almondine Recipe

Green beans almondine is a common recipe at steakhouses and French restaurants, but we think it’s even better if you make it at home, where the fresh veggies and fragrant garlic will really shine. Here’s why this recipe is the best.

    • Easy: This recipe is so simple and only takes 25 minutes to make. Plus, aside from the green beans, the other ingredients are simple kitchen staples you probably already have on hand!
    • Healthy: Most French side dishes aren’t very healthy, but this one sure is. What could be healthier than fresh veggies and almonds? This side dish is vegetarian, low calorie, low carb and gluten free! Swap out the butter for olive oil and this recipe becomes vegan approved.
    • Nutty: The sliced almonds in this recipe really shine. They add such a strong nutty flavor and a good crunch, which really goes well with the fresh green beans and the rich, buttery sauce.
    • Impressive: With vibrantly colored green beans and glistening buttery toasted almonds sprinkled on top, this side dish looks impressive and like you spent a lot of time on it. We love to serve it over the holidays on a fancy serving platter.

Tips For the Best Green Beans With Almonds

This fresh and healthy side dish is so easy to make, but it’s always great to have a few tips to help you out.

    • Toasting the Almonds: The buttery sliced almonds are the stars of this dish, so it’s important to cook them well. Don’t get the pan too hot when toasting the nuts, and make sure you cook them until they’re fragrant and have just started to change color. If you don’t toast the almonds enough, the dish will be a little bland, and if you toast them too much, it will taste very bitter.
    • Use Fresh Garlic: We always recommend using fresh garlic when you cook. But it’s especially important for a recipe like this, where the garlic is a central ingredient. These tender green beans are packed with garlic, so opt for fresh garlic rather than the pre-minced stuff or garlic in oil.
    • Buy Trimmed Beans: If you want to save a little bit of time, you can buy green beans that already have the ends cut off. Then you won’t have to prep the veggies when making this dish.
    • Add Lemon: Sometimes we like to add a squeeze of lemon to the green beans almondine right before topping it with the almonds. This adds brightness and acidity and really makes the beans pop with a zesty freshness.

How to Store and Reheat Green Beans with Almonds

These green beans with almonds will last in an airtight container in the fridge for up to 5 days. The best way to reheat them is on the stovetop, over medium heat, while stirring constantly. You can also reheat them in the microwave at 80% power in 20-second increments until they’re heated all the way through.

    Can You Freeze This Recipe?

This is a great recipe to freeze so that you can have an easy veggie dish to go with any meal. Make sure you let the beans cool completely, then store them in an airtight container in the freezer for up to 4 months. Thaw or defrost entirely before you reheat green beans almondine.
